Gastronomy of Iznájar
Iznájar is rich for its gastronomy.
Here you have some traditional dishes:

One of our traditional meals is the ‘guisillo’ in which old bread is used and it can be prepared in many ways but specially with fish.
‘Salmorejo’ is also a traditional plate of Iznájar. It is made of oranges, eggs, tuna and olive oil. You can also include more ingredients like olives, potato, etc.
The ‘porra’ is made with tomatoes, bread, eggs and pieces of ham.
‘Huevos volaos’ is a delicious dessert made of eggs, milk, macaroons and cinnamon.
In carnival, a traditional plate is The Filling, it’s a cold meat elaborated with eggs, bread crumbs, bits of ham and turkey breast.
In Christmas we eat, Spanish omelettes, honeyed donuts and home made sweets made from flour, almonds and lard.
And in Easter Week, the traditional dishes are ‘Pestiños’ and ‘Holy bones’
